This salad is healthy and always requested when there is a potluck party.I came up with this salad after one of my favorite restaurants closed down.It was carver's steak and chops.We liked going there especially on Valentines day, and on that date even if you make reservation and come there,you will still be on a waiting list for at least 1hour 1/2.Their food is great and the place is so romantic.They had this romaine salad with grilled onions and bell peppers,topped off with walnuts,blue cheese.and bacon.I think onions and peppers make this salad special.
I used spinach to add more dark greens in my diet,but you can use romaine lettuce if you prefer.
Ingredients:
Baby spinach
1 red,yellow or orange bell pepper sliced lengthwise
1/2 red onion sliced (not too thin)
honey roasted pecan pieces(I use fresh gourmet)
your choice cheese; Feta,blue cheese, or Gorgonzola (crumbled)
bacon bits (warmed up)
4 tablespoons olive oil
Heat 2 tbsp.oil in a skillet on high heat. Add bell pepper and saute.remove a peppers from skillet and add 2 tbsp. oil. add onions and saute.
Honey Dijon balsamic vinaigrette:
(you will not need all of it)
1/3 cup olive oil
1/4 cup balsamic vinegar
1 shallot
1 1/4 tablespoon Dijon mustard
1 tablespoon honey
salt and fresh ground black pepper
Mix all the ingredients using a mini blender.
Salad:
Place spinach in a salad bowl.Add onions and peppers.Pour balsamic vinaigrette, but don't over do it.slightly mix it together.sprinkle with bacon,pecans and cheese.

Im not keen on spinach, I heard its very hard to make it taste good, but you make it sound so easy! Thanks for posting, wishing you all the best!
